Composition and antioxidative properties of black mulberry fruits (Morus nigra L.) grown in Marmara region of Turkey

Abstract

The aim of this study is to determine the composition and antioxidative properties of black mulberry fruits (Morus nigra L.) grown up in Marmara region of Turkey. Its content was: 550- 790 mg total phenolic compounds, 0.23 - 0.30% total anthocyanin, 1.7 % total fat, 1.1- 2.3% protein. 17.6- 26.4 mg/100g ascorbic acid, 17.8- 23.8% total soluble substances, acidity 0.18- 0.35%, pH values 4.8 - 6.0. It was found that black mulberry fruits have a potential for the biological activities.
