Abstract
Centrifugation is a pivotal separation technique in the food industry, offering significant advantages in efficiency, speed, and precision over traditional methods. This chapter delves into the fundamental principles and forces driving centrifugation, highlighting the diverse range of centrifuge designs such as spin tube, hydrocyclone, tubular, disk, decanter, chamber bowl, basket centrifuges, etc. The chapter explores the extensive applications of centrifugation, including cream separation in dairy processing, pulp removal in fruit juice production, degumming and neutralization in edible oil refining, microbial cell separation in fermentation processes and others. We aim to provide a comprehensive understanding of how centrifugation enhances food processing, improves product quality, and optimizes operational efficiency. By examining both the theoretical and practical aspects, this chapter serves as a valuable resource for professionals and researchers seeking to leverage centrifugation in the food industry.
